Einkorn pancakes are a staple in our breakfast meals. If my kids had it their way, these delicious, warm, buttery, and high in nutrition (because of the einkorn flour) pancakes would be on the menu every day! They love them and I don’t worry if they eat them regularly since they are healthier than pancakes made with other flours!

I stole a tradition from my little sister. She has nine beautiful children! So, when I started having children in my late 20s, I had already watched and learned many wonderful things from how she did life as a busy mom.
One thing I loved was that she made birthday pancakes in the shape of the number that little one was turning on their birthday.
If you know me, you know how I enjoy celebrating my family members birthdays – I inherited this from my mom!
I enjoy decorating and making yummy food to celebrate the life that God blessed me with! It is always a joyous time seeing my little one grinning from ear to ear. Especially when they wake up and see the house decorated in the theme of their choice, and a birthday cake made to fit the theme. I get so excited!
So of course, to start the day off right I adopted the pancake tradition, shaping pancakes into their number and taking their pictures – all of them LOVE this and now expect it on their special day!
Is einkorn flour healthier?
YES! Einkorn is such a wonderful ancient grain. It is nutrient dense and very filling because it contains more protein. I love the flavor of it and how it doesn’t upset my family’s tummies. How is working with einkorn different than working with modern wheat?
Einkorn can be tricky in some recipes and the flour to liquid ratios can be a bit challenging at times. While some recipes work with a 1:1 replacement, others take some tweaking and shifting to get the right outcome.
When working with einkorn, it is best to weigh the einkorn flour. This is why all my einkorn recipes show measurements in grams. This also eliminates more dirty dishes since you’ll be pouring them directly into your mixing bowl – who wouldn’t appreciate that!
How to make einkorn pancakes
Simple ingredients for einkorn pancakes
- Einkorn Flour
- Baking Powder
- Baking Soda
- Eggs
- Milk or buttermilk
- Butter for greasing the pan
You may notice that I don’t add sugar in the pancake mix. This is because it really isn’t necessary for the end product to turn out great! If you are like us and adding syrup, honey, or even berries, then you don’t need the sugar in the batter.
If you are eating them plain and want them to be a little sweeter, then you could add 2 Tbsp of sugar to the batter, but my kids and I can assure you, it is unnecessary!
Steps for making einkorn pancakes are so easy!
- In a regular mixing bowl or your standing mixer bowl, place all your dry ingredients in.
- Mix with a fork or on low speed just to get the dry ingredients combined.
- Next, add your eggs and milk and mix on low to medium speed until it is fully combined.
- Moving to the stove top, set your heat to medium heat.
- I like to use a 1/4 cup measuring cup and scoop them onto the pan.
- Once bubbles begin to appear on the dough side (and before those cute little bubbles pop), I flip the pancake and let it cook for 30-45 seconds.
- Remove from heat and onto a plate!
Toppings for Einkorn Pancakes
- Butter
- Whipped cream
- Honey
- Syrup
- Berries
- Bananas
- My personal favorite: Peanut butter!
You may think that last one is crazy, but I learned it from my dad as a little kid, and it is the ONLY way to eat pancakes at home for me! So, consider giving it a try next time you make pancakes!

- If you are new to using einkorn flour, this is an easy and fun recipe that will turn out great!
- I like to double that batter and make a huge batch. Then I freeze the cooled off pancakes between parchment paper squares. This is great for meal prep on weekends or for days that you just don’t want to, or don’t have the time to make breakfast but want something homemade.
- If you make extra and store them in the fridge, I recommend not storing them in the fridge for more than 3-4 days in a sealed container.
- The best and cleanest way to reheat leftover pancakes is in your toaster!

- 5 cups (600g) Einkorn Flour
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 6 Eggs
- 2 cups (600g) Milk
- Butter for greasing the pan

- Next, add your 6 Eggs and 2 cups (600g) Milk. Mix on low to medium speed until it is fully combined.
- Moving to the stove top, set your heat to medium heat and grease your pan with butter.
- Using a measuring cup, I like to use a 1/4 cup measuring cup, scoop the batter onto the pan.
- Once bubbles begin to appear on the dough side (and before those cute little bubbles pop), I flip the pancake and let it cook for 30-45 seconds.
- Remove from heat and onto a plate, then top with some of the suggestions below and serve!
