How to Make Einkorn Banana Bread

It happened, we overbought bananas and now some are starting to get too ripe to eat. This doesn’t happen often in our home, but when it does we make this delicious einkorn banana bread!

My kids love bananas

Ok, your kids likely enjoy bananas too, but let me tell you about my kids’s obsession.

Around 2 years old it gets so bad that they HAVE to have a banana before bed. Not just one, but sometimes two or three. Our second kid would hold it in bed while falling asleep.

Sometimes he would be in the middle of chewing one and fall asleep. We would wake him up and make sure he wasn’t sleeping with a mouth full of banana.

It got so bad that if we didn’t have a banana for bedtime, the routine was incomplete causing distress and overwhelm to our little kids.

At times my husband would so kindly run to the grocery store so that our kids could have their lovely banana before bed.

Well, this trained me to always buy bananas in excess.

So much so, that on rare occasions we will have overripe bananas.

These rare times make me happy because I get to make this delicious banana bread that I’m sharing with you now!

More often we make einkorn blueberry muffins, since it’s easy to have frozen blueberries stocked in the freezer. So, what a treat to mix up our mornings!

Tools I Use

  • Kitchen scale
  • Kitchen-Aid Mixer (you can usually get these on sale at Costco)
  • Bread Loaf Pan
  • Measuring spoons – these are my favorite because they fit inside all spice containers

Ingredients

  • eggs (duck eggs are also really good for baking)
  • brown sugar
  • ripe bananas (the more ripe the sweeter the bread)
  • coconut oil
  • einkorn all-purpose flour
  • baking soda
  • salt

Glaze

  • ½ cup powdered sugar
  • cinnamon powder – I like to do a healthy sprinkle.
  • ginger powder – again, a healthy sprinkle!
  • add a few drops of water and combine.

When working with einkorn, it is best to weigh the einkorn flour. This is why all my einkorn recipes show measurements in grams.

This also eliminates more dirty dishes by pouring the ingredients directly into the bowl, instead of using measuring cups and spoons. However, in some of my recipes the ingredients are too small to weigh, so measuring spoons are necessary.

How To Make Einkorn Banana Bread

  1. Using some coconut oil, grease your loaf pan and preheat your oven to 350℉.
  2. In a bowl of a standing mixer, combine eggs, brown sugar, ripe bananas, and coconut oil.
  3. Turn off the mixer and add einkorn flour, baking soda, and salt. Mix until fully combined.
  4. Pour the bread dough into your prepared loaf pan. Then pop in the oven for 1 hour (or until a tooth pick comes out clean from the center).
  5. After baking, your bread will need about 20 minutes to cool off before adding the glaze.
  6. While your einkorn banana bread loaf is cooling, you can mix together the powdered sugar, cinnamon powder, and ginger powder in a small bowl with a fork.
  7. Add a couple of drops of water until you get a thick glaze. (This will be about 1/4 tsp of water.)
  8. Once your bread loaf is completely cooled, pour the glaze over the bread and serve!

Our family loves this bread so much, it is always gone the same day it’s made!

Sometimes I will double this and make a loaf and 12 einkorn banana bread muffins. It’s great for planning ahead when you know you’re going to have a busy morning coming up!

If you’re not satisfied with the idea of a glaze and want something more, try my cream cheese frosting recipe! It’s not too sweet but will be a nice substitution!

Putting overripe bananas to good use with this delicious einkorn banana bread recipe! The whole family will want you to double this recipe because one loaf won't be enough to satisfy them!

Ingredients
  

Einkorn Banana Bread Ingredients

  • 3 eggs farm fresh
  • 100g brown sugar organic
  • 3-4 ripe bananas
  • 65g coconut oil
  • 240g einkorn flour all-purpose
  • 1 tsp baking soda
  • ½ tsp salt

Glaze Ingredients (optional)

  • ½ cup powdered sugar
  • Pinch of cinnamon powder to taste
  • Pinch of ginger powder to taste
  • ¼ tsp water (May need more depending on how thick you want the glaze to be.)

Instructions
 

  • Grease a loaf pan with coconut oil and preheat your oven to 350℉.
  • In a bowl of a standing mixer, combine 3 eggs, 100g brown sugar, 3-4 ripe bananas, and 65g coconut oil.
  • Turn off the mixer and add 240g einkorn flour, 1 tsp baking soda, and ½ tsp salt. Mix until fully combined.
  • Pour into your prepared loaf pan. and pop in the oven for 1 hour (or until a tooth pick comes out clean from the center).
  • While your einkorn banana bread loaf is cooling you can mix together ½ cup powdered sugar, Pinch of cinnamon powder, and Pinch of ginger powder in a small bowl with a fork. Add ¼ tsp water and combine.
  • Once your bread loaf is completely cooled, pour the glaze over the bread and serve!

Notes

  1. This recipe can also be converted into einkorn banana bread muffins! I do it all the time and it makes for a nice grab and go for quick mornings. 
  2. This recipe has only been tested with Einkorn flour, if you substitute another flour the results may not turn out.
  3. Times for prep time will vary if you are teaching or having little hands help you make this recipe. It is a great recipe to have help making the batter and scooping into the muffin tins!
  4. My recipes are tried and tested in a humid climate around 1,500 feet in elevation. Depending on your elevation, you may have to alter my recipe slightly.
