Huevos Rancheros Recipe – The Quickest Breakfast Idea

Savory, salty, and filling, huevos rancheros is the best kind of breakfast to start your day!

If you know me, I love cooking and creating healthy and delicious meals for my family. Occasionally, I throw in a sweet tasty treat, however, savory and salty is my favorite! This breakfast does not fall short in that department, and it is so filling for my entire family! My FAVORITE thing about this breakfast is how dang fast it comes together! It doesn’t get any easier than this one my friends!

I’m not lying when I say, we eat huevos rancheros weekly, and often 2-3 times a week! We love it! My kids even nicknamed it “Ferros and Cherros”, they are adorable and that’s actually what we all call it around our home and to strangers – we are weirdos!

I learned about it years ago from a cookbook, however, I have made additions to ours that I think make it taste even better without adding much more prep work. However, you will have to dice a red onion! Sorry!

How to make Huevos Rancheros

Tools Used

  • Cookie sheet pan
  • Parchment paper
  • Frying pan – we love this set but they are an investment – they are non-toxic, non-stick, and dishwasher safe. They are made with stainless steel and ceramic.
  • A good chopping knife – if you are in the kitchen a lot, like me, you’ll know the value of investing in a great set of kitchen knives! My husband got me these beautiful knives for my birthday one year. I have loved and taken care of them for many years! They are on amazon but, I recommend you buy them from Costco if you can.

Ingredients

  • 5 corn tortillas
  • 1 can refried beans
  • 2.5 cups shredded cheese (honestly, we just use a handful here and spread it equally over the bean covered tortilla)
  • 5 eggs
  • 1/4 of red onion
  • 4-6 cherry tomatoes
  • 1-2 avocados
  • 1 lime
  • 1 Tbsp cilantro
  • Salt and pepper to taste

Steps for Assembling Huevos Rancheros

  1. Dice your onion, tomatoes, avocado and chop your cilantro and set aside
  2. Cover your cookie sheet with parchment paper
  3. Place 5 corn tortillas on the parchment paper, making sure that they don’t overlap each other. It’s ok if they hang off the edge slightly.
  4. Next, cover the tortillas with the refried beans.
  5. After the beans have been evenly distributed, layer on the shredded cheese!
  6. Then place those babies in the oven on low broil for 3-5 minutes, or until the cheese has melted.
  7. Next, grab your frying pan, if it’s not nonstick grease it up, and cook your eggs over easy.
  8. When the tortillas are finished, pull them out and place your dippy egg on top!
  9. Then you will add the toppings! I definitely recommend you don’t skimp here – this makes it so yummy!
  10. Finish with a sprinkle of salt and pepper and serve!
