Unfortunately, I have known people that have said they don’t like biscuits.
What?!
How is that possible? It’s like someone saying they don’t like croissants!
Well, my opinion is that those who say they don’t like biscuits, haven’t tried these biscuits!
I’m not just saying that because I like them so much, my own husband and two friends claimed they didn’t like biscuits, but tried mine anyway. Sure enough, they liked them – two even went back for seconds!
I guess you could be thinking, oh they were just being nice. Maybe you’re right. Regardless, I stand by my thoughts that these are not only so easy to make, but also amazing!
What is Einkorn?
Einkorn is such a wonderful ancient grain. It is nutrient dense and very filling. I love the flavor of it and how it doesn’t upset my family’s tummies. I have written an entire article about the benefits of using einkorn and why it is superior to other grains.
When working with einkorn, it is best to weigh the einkorn flour. This is why all my einkorn recipes show measurements in grams. This also eliminates more dirty dishes by pouring the ingredients directly into the bowl, instead of using measuring cups and spoons. However, in some of my recipes the ingredients are too small to weigh, so measuring spoons are necessary.

How to make Einkorn Biscuits
Tools Used
- Kitchen Aid or Mixer
- Parchment Paper
- Sheet Pan
- Circular Cookie Cutter (optional)
Ingredients
- 2 cups (240g) Einkorn Flour
- 1 Tbsp Baking Powder
- 1 tsp Salt (omit if using salted butter)
- 3 Tbsp (45g) Butter
- 2 Tbsp (30g) Sour Cream
- ½ cup (110g) Milk
Easy Steps
- Preheat oven to 375℉.
- In your bowl of your standing mixer, combine all ingredients: 2 cups (240g) Einkorn Flour, 1 Tbsp Baking Powder, 1 tsp Salt, 3 Tbsp (45g) Butter, 2 Tbsp (30g) Sour Cream, and ½ cup (110g) Milk on medium-low speed.
- Once all the ingredients are combined in a large clump, turn off your mixer.
- Then on a silicon surface or a lightly floured surface, roll out your dough to a ½ inch thickness.
- Using a cookie cutter or a biscuit cutter, cut out your biscuits. Use the scraps to repeat this step until you have all the dough formed.
- Place them on your prepared baking sheet and space your biscuits at least 1½ inches apart.
- Bake for 12-14 minutes, or until the bottoms have browned.
- Serve warm!
