Einkorn Biscuits – Quick and Easy

Unfortunately, I have known people that have said they don’t like biscuits.

What?!

How is that possible? It’s like someone saying they don’t like croissants!

Well, my opinion is that those who say they don’t like biscuits, haven’t tried these biscuits!

I’m not just saying that because I like them so much, my own husband and two friends claimed they didn’t like biscuits, but kindly partook anyway. Sure enough, they liked them – two even went back for seconds!

I guess you could be thinking, oh they were just being nice. Maybe you’re right.

Regardless, I stand by my thoughts that these are not only so easy to make, but also amazing!

Is Einkorn flour good for you?

Einkorn is such a wonderful ancient grain. It is nutrient dense and very filling. I love the flavor of it and how it doesn’t upset my family’s tummies. I have written an entire article about the benefits of using einkorn and why it is superior to other grains.

When working with einkorn, it is best to weigh the einkorn flour. This is why all my einkorn recipes show measurements in grams.

This also eliminates more dirty dishes by pouring the ingredients directly into the bowl, instead of using measuring cups and spoons. However, in some of my recipes the ingredients are too small to weigh, so measuring spoons are necessary.

Why is Einkorn so sticky?

Einkorn is a very nutrient dense flour. It is unique in its gluten properties and structure, allowing gluten sensitive individuals to partake without indigestion troubles. Due to the gluten structure being different, it is generally much more sticky. When compared to modern wheat, mixing liquids with the einkorn flour cause it to be more sticky because they are absorbed at a slower rate.

Why is my Einkorn bread so dense?

This could be a side effect to trying to fix the sticky situation described earlier. Einkorn bread often turns dense when adding too much flour to the dough. Einkorn flour is slow to absorb liquids and fats. When you add too much einkorn flour to the dough, it will dry up quickly, causing a dense bread.

Can you replace all-purpose flour with Einkorn flour?

No, not always. In some recipes you can achieve the desired results in your baked goods. However, most of the time, substituting 1:1 all purpose modern flour for einkorn flour will end in a less than desired outcome. This is why it is best to follow a recipe made for einkorn flour. This will reduce or eliminate trial and error in your kitchen!

How to make Einkorn Biscuits

Tools Used

  • Kitchen Aid or Mixer
  • Parchment Paper
  • Sheet Pan
  • Circular Cookie Cutter (optional)

Ingredients

  • 2 cups (240g) Einkorn Flour
  • 1 Tbsp Baking Powder
  • 1 tsp Salt (omit if using salted butter)
  • 3 Tbsp (45g) Butter
  • 2 Tbsp (30g) Sour Cream
  • ½ cup (110g) Milk

As a good rule of thumb, it is best practice to source quality food products such as organic, grass fed, wild caught, local, non-GMO, and made at home with the most basic of ingredients. This will help to have more nutrient dense meals that will not only taste better, but nourish your family while reducing toxins and unnecessary chemicals. Easy Steps

  1. Preheat oven to 375℉.
  2. In your bowl of your standing mixer, combine all ingredients: 2 cups (240g) Einkorn Flour, 1 Tbsp Baking Powder, 1 tsp Salt, 3 Tbsp (45g) Butter, 2 Tbsp (30g) Sour Cream, and ½ cup (110g) Milk on medium-low speed.
  3. Once all the ingredients are combined in a large clump, turn off your mixer.
  4. Then divide the dough into 5 equal parts.
  5. Shape each part into a round flat disc shape, about an inch thick.
  6. Place them on your prepared baking sheet and space your biscuits at least 1½ inches apart.
  7. Bake for 14-18 minutes, or until the bottoms have browned.
  8. Serve warm!

How long will einkorn biscuits last?

They will last on the countertops in an airtight container for about 2 days. If you want them to last longer, place them in an airtight container in the refrigerator for up to 5 days.

Make sure they are completely cooled before storing them, otherwise the steam will get trapped and create an environment for mold to thrive.
