This is the best version of Biscuits and Gravy
I come from a long family line of biscuit and gravy lovers, I can admit that I will eat the worst of biscuits and gravy and still enjoy it.
I’m not hard to please with this dish.
I wouldn’t say my husband is hard to please, however, I will say that when he doesn’t like something, he won’t change!
That being said, my husband doesn’t like biscuits. I know what you’re thinking, how could I have married him?! Well, honestly, I found out after the marriage vows, so rather than being disappointed for the rest of my life – I won him over to our side!
This version using einkorn flour for the homemade biscuits, and sausage gravy is now his favorite breakfast. When we haven’t had it for a couple of weeks, he asks me to make it!
I did it guys!
So if I can win over my hard to change, set in his ways husband – you gotta believe this is the best version out there!
My Big Fail
This breakfast has always turned out perfectly… Except that one time when we had a friend driving through town.
Our friend and his son stayed with us short notice, they were driving through our area to get back home. It was such a great surprise. However, being the planner that I am, I quickly put together dinner and breakfast meal plans while our friends would be staying in our loft.
Breakfast would be einkorn biscuits and sausage gravy with scrambled eggs.
Having made this so many times I was confident to make it short notice. I knew that it would be a filling breakfast for our friends as they would be hitting the road after eating.
Shortly after I put the biscuits in the oven, unexpectedly, one of my kids threw up. I had forgotten to set the timer and ran to attended to the matter. After getting my kiddo a bowl and then back into bed, I returned to the kitchen.
I realized my mistake of not setting the timer. I was stressed about my little one. Still wanting to be a good host, I just eyeballed the biscuits. When they looked done I pulled them out, I didn’t want them to overcook and burn.
I had finished breakfast. Our sweet guests were very understanding of the chaos that morning and they dished up.
Everyone was eating, except me because I returned to taking care of my kiddo. My husband informed me that the biscuits were very undercooked in the middle. Oh crap! I felt terrible! My love language is making food for others!
After so many apologetic statements, our friend assured us that he liked it. He is seriously a gem! I know he was trying to make me feel better because, doughy biscuits….eww!
Needless to say, even when you are an experienced cook and baker, you are human. I had a very humbling morning serving a subpar breakfast to my family and friends. Thankfully they didn’t tease me over it and instead tried to make me feel better!
How To Make Einkorn Biscuits And Sausage Gravy
Tools used
- Cast Iron Skillet
- Cookie Sheet Pan
- Parchment Paper
Ingredients
- 1 batch of biscuits
- 1 lb ground sausage (breakfast)
- ½ cup (60g) einkorn flour
- 4 cups (1000g) milk
- 2 tsp ground fennel seed (this is also great for boosting a mama’s milk supply!)
- ½ tsp onion powder
- ½ tsp pepper
- 1 tsp salt or to taste
Steps for making einkorn biscuits and sausage gravy
- If you are preparing the 1 batch homemade biscuits from scratch, start preparing this first and preheat your oven to 375℉. Follow the instructions in my recipe for the best einkorn biscuits!
- While your biscuits are baking in the oven, brown 1 lb ground sausage over medium heat.
- Then drain any excess grease if necessary. I usually don’t.
- Pour the ½ cup (60g) einkorn flour in with the sausage and be sure to thoroughly coat the sausage.
- Then carefully pour 4 cups (1000g) milk into the pan with the sausage and turn up the heat to medium-high.
- Being sure to scrape the bottom of the pan while mixing. Continue mixing until the milk turns into a gravy texture. This will take between 8-10 minutes.
- Once the gravy has formed, add 2 tsp ground fennel seed, ½ tsp onion powder, ½ tsp pepper, and 1 tsp salt. Mix well.
- Serve over the biscuits and with a side of eggs prepared the way you like!
I like serving with scrambled eggs topped with cheese or ketchup!

Equipment

- 1 lb ground sausage (breakfast)
