Homemade einkorn bagels are so good and easy to customize! Unlike other recipes online, this einkorn bagel recipe uses only 5 ingredients and takes 40 minutes from start to plate! It is a no yeast, no sourdough, no boiling, easy einkorn bagel recipe. I use an air fryer to bake them in 20 minutes! Enjoy!

What’s so special about einkorn bagels?

Bagels are so unique in texture with their crisp, shiny outer shell and their dense, chewy interior. If you are already a fan of bagels then the star of the show in this recipe is einkorn flour!

Einkorn is such a wonderful ancient grain. It is nutrient dense and very filling because it contains more protein. I love the flavor of it and how it doesn’t upset my family’s tummies. The benefits of using einkorn goes into greater detail about why einkorn is so healthy and how it is superior to other grains.

When working with einkorn, it is best to weigh the einkorn flour. This is why all my einkorn recipes show measurements in grams.

This also eliminates more dirty dishes by pouring the ingredients directly into the bowl, instead of using measuring cups and spoons. However, in some of my recipes the ingredients are too small to weigh, so measuring spoons are necessary.

Here are some of my go-to recipes for meals that are quick and easy to make: einkorn biscuits, einkorn flatbread, einkorn pancakes, and einkorn chocolate chip cookies.

Do you have to boil bagel dough before baking them?

This is common for some recipes. This is because it can create a crisp, shiny crust that New York style bagels are famous for. However, this step isn’t exactly necessary to obtain a desirable bagel crust. My einkorn bagel recipe uses an egg wash and an air fryer to create that memorable bagel bite!

How do you keep einkorn from sticking to your hands?

My favorite work around this issue is to add a fat to your hands before forming dough or working with it. This works so well because einkorn flour is slow to absorb fat, making it the perfect barrier to keep it from sticking to your hands like crazy! My favorite options are butter, lard, olive oil, avocado oil, coconut oil, and tallow.

For this savory einkorn bagel recipe, I use olive oil or avocado oil.

Are bagels healthy?

Ingredients matter. As mentioned earlier, einkorn flour is packed with more nutrient dense components. Using einkorn flour to make your bagels will make them healthier. Likewise, cutting out sugar and using natural sweeteners like honey for your sweeter bagel doughs, will be better for your blood sugar too, making them more healthy.

As a good rule of thumb, it is best practice to source quality food products such as organic, grass fed, wild caught, local, non-GMO, and made at home with the most basic of ingredients. This will help to have more nutrient dense meals that will not only taste better, but nourish your family while reducing toxins and unnecessary chemicals.   • Air Fryer: I use a toaster oven air fryer instead of the basket air fryer. This recipe should work for either just watch it closely the first time you make it to be sure! This model on amazon is similar to mine that I bought at Costco. However, Costco is a much better deal!

Ingredients for homemade einkorn bagels

  • Einkorn flour all purpose: If you are using whole wheat, reduce the weight by 24g per cup
  • Yogurt: I used plain Greek yogurt for this recipe.
  • Baking powder: Be sure to use a non-aluminum brand or no added aluminum like this one.
  • Salt: Redmond’s Real salt – the only salt I use!
  • Egg: Local and farm fresh is best if you can find those.
  • Everything bagel seasoning (optional): I like to buy organic.
  • Oil: This is optional to help when shaping. I like to use olive or avocado oil for the savory flavored bagels and coconut oil for the sweet bagels.

If you like to customize your bagels try using a different seasoning like minced garlic or poppy seeds. These einkorn bagels are also really good plain, you can easily turn them into a breakfast bagel sandwich with bacon, avocado, and egg!

How to make einkorn bagels

1. Measure and mix together the einkorn flour, baking powder, and salt in a bowl or standing mixer.

2. Add the yogurt and combine the dough completely.

3. Roll out the dough onto an oiled surface so that the dough doesn’t stick.

4. Divide the dough into 4 equal balls.

5. Poke a hole in the center with your finger and gently stretch and shape into circle, use oil to smooth out any cracks that may occur during this process

6. Place parchment paper on the rack of your air fryer and set your bagels on the rack leaving some space for them to expand.

7. In a small bowl, crack an egg and mix together the egg yolk and white until it is a smooth consistency.

8. Brush a light coat of egg wash over the tops of the bagels and sprinkle your seasoning of choice.

9. Bake in the air fryer for 10 minutes on 350℉. (Some air fryers will cook the bagels too quickly and could burn the surface of your bagels. Depending on your air fryer you may need to set to 325℉.)

10. Flip the bagels and bake another 10 minutes on 350℉.

11. Let cool slightly before handling and serve with your favorite toppings!

Success tips for making these simple einkorn bagels

  • Don’t add too much flour. Einkorn is a dense flour so only use what my recipe calls for and resist the urge to flour your surfaces. Instead, use an oil on a silicone mat or cutting board, and your hands.
  • Don’t over do the egg wash. When you are brushing on the egg wash to the tops of the bagel, do so sparingly. You don’t want generous amounts of egg, otherwise you will get a scrambled egg effect pooled near the bottom.

Can you make einkorn bagels in the oven?

Yes, you can however, they are much better in an air fryer. If you don’t have that as an option, you can bake them in your oven at 400℉ for 20 minutes, making sure to flip them half way through. My personal preference is using the air fryer because the oven doesn’t get the crust as crisp as the air fryer does.

How long will einkorn bagels last?

  • Fridge: Einkorn bagels will last in the fridge for about a week.
  • Freezer: If you decide to make multiple batches and meal prep I would suggest keeping anything in the freezer that is intended to be store for more than a week. If freezing, allow the bagel to completely cool. Then cut in half and store in a freezer container for up to a month.

  • 180g einkorn flour all-purpose
  • 250g Greek yogurt
  • 2 tsp baking powder
  • ½ tsp salt redmond's real salt
  • 1 egg

      I was looking into high protein recipes using my Einkorn flour & came across this one. I only had vanilla Greek yogurt, but went ahead and made them anyway. They turned out so yummy! I don’t have an air fryer, so baked them at 350, they took 22 minutes, and I did not flip them. From my calculations each one of my bagels had 12g of protein. Thank you for a delicious recipe!

        Lisa, I am so glad that you found this recipe! Thank you so much for sharing how you baked them in the oven, that will help other readers since I air fry mine. I like having naturally higher protein in baked goods whenever possible, it helps keep my large family feeling full and satisfied longer! I only suggested plain Greek yogurt because vanilla typically has higher sugar amounts, but I bet the vanilla flavor added a nice twist and would be good to substitute in the Raisin Cinnamon Einkorn Bagel recipe as well!

    Can we bake in the oven if we don’t have an air fryer? How much time at what temp should we bake?

      Yes, you can however, they won’t turn out as crisp on the outside because the air fryer circulates the air more and gives the outside that dry, crisp, crust that bagels are known for. However, they will still turn out ok if bake them in your oven at 400℉ for 20 minutes, making sure to flip them half way through. But of course, for best results an air fryer is my recommendation for my recipe.

    Just made these and aside from almost burning after the first 10 minutes, they turned out great. After flipping, I lowered to 325 and they were done 4 minutes earlier. Much easier to work with than another recipe I’ve been using. I also made 2 instead of 4. I’ll be making them again.
