Dice your ¼ red onion, 4-6 cherry tomatoes, 1-2 avocados, 1 lime, and chop your 1 Tbsp cilantro
Cover your cookie sheet with parchment paper
Place 5 corn tortillas on the parchment paper, making sure that they don't overlap each other. It's ok if they hang off the edge slightly.
Next, cover the tortillas with 1 can refried beans.
After the beans have been evenly distributed, layer on the 2½ cups shredded cheese!
Place them in the oven on low broil for 3-5 minutes, or until the cheese has melted.
Next, grease your frying pan and cook your 5 eggs over easy.
When the tortillas are finished, pull them out and place your dippy egg on top!
Then you will add the toppings! I definitely recommend you don't skimp here - this makes it so yummy!
Finish with a sprinkle of salt and pepper and serve!
