Huevos Rancheros

I'm not lying when I say, we eat huevos rancheros weekly, and often 2-3 times a week! We love it! My kids even nicknamed it "Ferros and Cherros", they are adorable and that's actually what we all call it around our home and to strangers - we are weirdos!

Ingredients
  

  • 5 corn tortillas
  • 1 can refried beans
  • cups shredded cheese
  • 5 eggs
  • ¼ red onion diced
  • 4-6 cherry tomatoes sliced
  • 1-2 avocados diced
  • 1 lime quartered
  • 1 Tbsp cilantro chopped
  • salt and pepper to taste

Instructions
 

  • Dice your ¼ red onion, 4-6 cherry tomatoes, 1-2 avocados, 1 lime, and chop your 1 Tbsp cilantro
  • Cover your cookie sheet with parchment paper
  • Place 5 corn tortillas on the parchment paper, making sure that they don't overlap each other. It's ok if they hang off the edge slightly.
  • Next, cover the tortillas with 1 can refried beans.
  • After the beans have been evenly distributed, layer on the 2½ cups shredded cheese!
  • Place them in the oven on low broil for 3-5 minutes, or until the cheese has melted.
  • Next, grease your frying pan and cook your 5 eggs over easy.
  • When the tortillas are finished, pull them out and place your dippy egg on top!
  • Then you will add the toppings! I definitely recommend you don't skimp here - this makes it so yummy!
  • Finish with a sprinkle of salt and pepper and serve!
