Banana Pudding Made With Einkorn

Banana pudding is a summertime favorite of mine. Ok really it is an anytime favorite of mine! Rich, creamy, and filling, this banana pudding, made with einkorn, will be the best you’ve ever had!

Making food from scratch can often take time, but real food is worth it. While this recipe can take a little more time then the boxed version, you will know exactly what you’re consuming. Not to mention, it tastes significantly better! I think after you try this, you will be convinced that the little bit of extra time was worth it!

What is Einkorn?

Einkorn is such a wonderful grain. It is nutrient dense and very filling. I love the flavor of it and how it doesn’t upset my family’s tummies. When working with einkorn, it is best to weigh the einkorn flour. This is why all my einkorn recipes show measurements in grams.

This also eliminates more dirty dishes by pouring the ingredients directly into the bowl, instead of using measuring cups and spoons. However, in some of my recipes the ingredients are too small to weigh, so measuring spoons are necessary.

How to make banana pudding from scratch

Tools I Used

  • Immersion Blender optional, but recommended
  • Large Saucepan
  • Whisk attachment for the immersion blender

Ingredients

  • milk
  • all-purpose einkorn flour
  • sugar
  • salt
  • egg yolks
  • vanilla extract
  • butter
  • double batch of homemade whipped cream
  • bananas
  • vanilla waffers

Step 1: How to make homemade pudding from scratch

  1. In a tall measuring cup or mason jar pour 1 cup (250g) milk and add ⅔ cup (80g) all-purpose einkorn flour. Use your immersion blender to combine these two ingredients.
  2. Next, in a large saucepan, pour in 5 cups (1,250g) milk. Turn your heat to medium and whisk in your milk/flour mixture slowly.
  3. Whisking your milk mixture occasionally, use your emptied container and put ½ cup (100g) sugar, 1 pinch salt, and 6 egg yolks into the jar and mix.
  4. Once the milk/flour mixture is steaming, we will take out about 1 cup to temper the egg.
  5. To temper your egg mixture, slowly pour the hot liquid in, while whisking the egg mixture.
  6. Now slowly pour, while whisking continuously, the egg mixture back into the milk/flour mixture in the saucepan.
  7. Keep whisking for about 20 minutes until the pudding begins to bubble and becomes thick.
  8. Once it has reached a thick consistency, turn off your heat and stir in 1 Tbsp vanilla extract and 4 Tbsp (56g) butter.

Step 2: Making the whipped cream

If you choose to make the whipped cream from scratch, and I highly recommend that, you will do so while the pudding is cooling down.

This will need to be a double batch. It will take about 15 minutes to make a double batch.

Once made, you will use half (three cups) to mix into the pudding and the second half (three cups) to layer on top of the the dish.

Once you have had homemade whipped cream, can you really settle for store bought again? This homemade version is so easy to make. Best of all, it only requires three ingredients and a mixer. It's dangerously easy to make!

Step 3: Prepping the bananas and cookies

You’ll want to grab some vanilla wafers. I hope to have a recipe up for this in the near future, however, for now you can try to find them at a natural foods store.

Lastly, you will need 4-5 bananas sliced.

Steps for assembling your banana pudding

9. Start by mixing one batch of the homemade whipped cream into your already prepared cooled pudding. This will help fluff it up, making it less dense.

10. Then you will layer cookies and banana slices on the bottom of your dish.

11. Next, pour about 1/3 of the pudding mixture over the cookie/banana layer.

12. Then do another layer of cookies and banana slices.

13. Add the next 1/3 of pudding.

14. Followed by the last round of cookies and banana slices.

15. Then pour the remaining 1/3 pudding over top.

16. Lastly, top with the second batch of homemade whipped cream evenly over the top.

I like to sprinkle crushed up cookies over the top and place a few whole cookies around to make it look pretty!

  • 1 Immersion Blender optional
  • 1 Large Saucepan
  • 1 Whisk
  • 1 Serving Bowl

Ingredients
  

  • 250g Milk
  • 80g Einkorn Flour all-purpose
  • 1250g Milk
  • 100g Sugar
  • 1 pinch Salt
  • 6 Egg Yolks
  • 1 Tbsp Vanilla Extract
  • 56g Butter
  • Double Batch Homemade Whipped Cream
  • 3-4 Bananas sliced
  • 1 box Vanilla Wafers

Instructions

  • Once the milk/flour mixture is steaming, we will take out about 1 cup to temper the egg.
  • To temper your egg mixture, slowly pour the hot liquid in, while whisking the egg mixture.
  • Now slowly pour, while whisking continuously, the egg mixture back into the milk/flour mixture in the saucepan.
  • Keep whisking for about 20 minutes until the pudding begins to bubble and becomes thick.
  • Once it has reached a thick consistency, turn off your heat and stir in 1 Tbsp Vanilla Extractand 56g Butter.
  • Set aside and allow it to cool completely. I recommend placing it in the fridge after it has let off steam for at least 10 minutes.
  • While the pudding is cooling, prepare the Double Batch Homemade Whipped Cream.
  • Once the pudding is completely cooled, mix 3 cups into the pudding.
  • Next, layer cookies and banana slices on the bottom of your dish.
  • Alternating 1/3 of the pudding mixture over cookie/banana layers until you have used it all.
  • Top with the second batch of homemade whipped cream evenly over the top.
  • Optional: sprinkle crushed up cookies over the top and place a few whole cookies around.

  • 1 cup Milk
