Cheesy ham and potato soup is so flavorful and inviting as we enter into fall and prepare for the winter months. It’s creamy and satisfying all while getting a load of veggies!

My sons are going through a stage right now where they think they don’t like veggies. However, when I convince them to try it out, they often times are surprised by how much they actually do like the vegetables!

This soup was no exception for them. After stirring their spoons around in the bowl and identifying the green and orange invaders they protested and proclaimed they’d rather starve then try a bite.

After some discussion, my 3-year-old agreed to try one small bite.

Barely allowing the spoon to enter his mouth, I slid the drippy spoonful of soup in. He was prepared to spit it out, but then his taste buds realized they did in fact, like it!

This sparked my 5-year-old’s interest. Being older and wiser to mom’s tricks he wasn’t as easy to convince to eat dinner and had settled it in his mind that he would go to bed without dinner.

But after seeing his little brother rave about it, he then agreed to try a bite. As he thought about his response, he finally blurted out “Mom, it tastes better than dirt.”

Thank you son! I am so glad that I can bring you a dinner that tastes better than dirt!

Meanwhile, my husband and daughter were in the kitchen getting thirds!

How to make Cheesy Ham and Potato Soup

Suggested Equipment

  • Instant Pot
  • Cutting Board
  • Cheese Shredder
  • Sharp Knife

Ingredients

  • Meat: ham and bacon
  • Veggies: potatoes, celery, and carrots
  • Dairy: heavy cream (or whole milk), sour cream, and sharp cheddar cheese
  • Bone Broth (you can substitute this for chicken broth)
  • Spices: salt, pepper, chives or green onions

Why use bone broth instead of chicken broth or water?

I substitute bone broth for water in all my soup recipes. This is because bone broth is packed with an enormous amount of nutrients and flavor.

Here are just a few of the benefits bone broth contains:

  • Minerals and components within bone broth are important for cellular function. They aid in the remineralization of our own skeletal system, especially as we age. Not only is this important as we age, but also as we are developing.
  • Collagen is a component of bone broth. Collagen is connective; therefore, it helps strengthen your hair, nails, skin, tissues, and pelvic floor.
  • Collagen aids in the proper growth and development of a baby while in utero and as a young child is growing and developing.
  • Bone broth stimulates the immune and protective response in our body to fight against foreign material! How cool is that – it is literally fuel for our immune system’s response. (source)
  • Bone broth contains gelatin which helps repair the gut lining. In some cases, this can help those with food sensitivities related to leaky gut.
  • Bone broth contains potassium and glycine which aid the liver in detoxification.
  • Bone broth contains arginine, glycine, and glutamine which promote a well-functioning metabolism.

Steps for making Cheesy Ham and Potato Soup

  1. Dice the ham, celery, potatoes, and carrots.
  2. Add to the Instant Pot your diced items, bone broth, salt, and pepper.
  3. Turn the vent to sealing and set on manual for 10 minutes on high pressure.
  4. After the timer goes off, you can quick release the pressure but be very careful since the steam will burn you if your hand or arm touches it.
  5. Then add the heavy cream, sour cream, and 6 oz of the shredded cheese.
  6. Stir until fully combined, and the cheese has melted.
  7. Your soup is ready to eat now or you can add desired toppings. We add chopped bacon and more shredded cheese.

  • 1 lb ham precooked and diced
  • 2 sticks celery diced
  • 1½ lbs potatoes diced
  • ½ lb carrots chopped or baby carrot size
  • 4 cups bone broth
  • 2 cups water
  • 1 tsp salt or to taste
  • ½ tsp pepper or to taste
  • ½ cup heavy cream
  • ½ cup sour cream
  • 6 oz sharp cheddar cheese shredded

Instructions
 

  • Dice the 1 lb ham, 2 sticks celery, 1½ lbs potatoes, and ½ lb carrots.
