Einkorn Cinnamon Raisin Bagels

Homemade einkorn cinnamon raisin bagels are so good and easy to make! Unlike other recipes online, this einkorn cinnamon raisin bagel recipe uses only 8 ingredients and takes 40 minutes from start to plate! It is a no yeast, no sourdough, no boil einkorn cinnamon raisin bagels recipe. I use an air fryer to bake them in 20 minutes! Enjoy!

Ingredients
  

  • 180g (1½ cups) einkorn flour all purpose
  • 2 tsp baking powder
  • 2 tsp cinnamon powder
  • ½ tsp salt
  • 70g (½ cup) raisins
  • 250g (1 cup) yogurt Greek
  • 42g (2 Tbsp) honey
  • 1 egg
  • coconut oil

Instructions
 

  • Measure and mix together the 180g (1½ cups) einkorn flour, 2 tsp baking powder, 2 tsp cinnamon powder, ½ tsp salt, and 70g (½ cup) raisins in a bowl or standing mixer.
  • Add the 250g (1 cup) yogurt and 42g (2 Tbsp) honey and combine the dough completely.
  • Roll out the dough onto a coconut oiled surface so that the dough doesn't stick.
  • Divide the dough into 5 equal balls.
  • Poke a hole in the center with your finger and gently stretch and shape into circle, use oil to smooth out any cracks that may occur during this process
  • Place parchment paper on the rack of your air fryer and set your bagels on the rack leaving some space for them to expand.
  • In a small bowl, crack 1 egg and mix together the egg yolk and white until it is a smooth consistency.
  • Brush a light coat of egg wash over the tops of the bagels and sprinkle your seasoning of choice.
  • Bake in the air fryer for 10 minutes on 350℉.
  • Flip the bagels and bake another 10 minutes on 350℉.
  • Let cool slightly before handling and serve with your favorite toppings!
