1 Frying pan (large)
1 Pot (large)
- 12 oz fusilli (we use jovial, you can substitute penne too)
- ½ Tbsp olive oil
- 1.5 lb ground sausage (can substitute Italian sausage cut into oblong ovals)
- 1 small onion (yellow or white diced)
- 3 cloves garlic (minced)
- salt and pepper to taste
- 2.5 cups heavy cream
- 4.5-5 oz spinach (about 5 handfuls)
- 1 cup parmesan cheese (shredded)
Prepare the veggies by dicing the onion and mincing the garlic.
Start by boiling water in a pot and adding a pinch of salt and some olive oil into the water. Then follow the instructions on your package for the 12 oz fusilli.
In a large frying pan, bring the ½ Tbsp olive oil to a to medium heat.
Cook the 1.5 lb ground sausage, 1 small onion, and 3 cloves garlic until the sausage is cooked thoroughly. Season with salt and pepper.
Drain the fat.
Next add 2.5 cups heavy cream. Stirring with a wooden spoon be sure to scrape the any brown bits stuck to the bottom of the pan to incorporate into the sauce.
Once the cream has thickened, add 4.5-5 oz spinach one handful at a time.
Once all the spinach has wilted, stir in the 1 cup parmesan cheese.
Stir until cheese melts.
Pour sausage mix over the pasta and mix well.
- This is so good with either ground sausage or the large Italian sausage links cut into ½ inch ovals.
